Vanilla Iced Cupcake Recipe

Ingredients:
Cupcake Mixture

1 ½ cup (185g) plain flour (all-purpose)
3 teaspoons baking powder
125g unsalted butter softened
1 teaspoon natural vanilla extract
2/3 cups (145g) caster sugar
2 eggs
125ml (½ cup) milk

Icing Mixture

2 tablespoons butter
1 ½ - 2 cups icing sugar
1 teaspoon vanilla extract
2 - 3 tablespoons water



Methods:
  1. Preheat the oven to 180 degrees celsius. Sift the flour and baking powder into a bowl. Add the butter, vanilla, sugar, eggs, milk and mix, either with electric beaters or with a wooden spoon, until smooth.
  2. Arrange large cupcake cases in a 12 - hole muffin tin and spoon in the mixture into the cases. Bake fro 17 - 20 minutes or until golden brown. Leave in the tin for 5 minutes before turning out onto a wire rack to cool.
  3. Mix the butter, icing mixture, vanilla and water together in a small mixing bowl.
  4. When the cupcakes are cool ice the cupcakes to the way that you would like.
