Ingredients
250g butter softened
½ cup icing sugar
1 cup rice flour
2 cups plain flour
1 tsp vanilla extract
Method:
- Beat the sugar, butter and vanilla extract until a pale yellow colour and fluffy.
- Hand mix both the rice and plain flour into the butter mixture until you get a biscuit consistency that isn’t too wet or too dry.
- Put the batter into cling wrap and wrap up tight and it in the fridge for 3 to 4 hours or until firm.
- Preheat oven to 180 degrees celsius. Roll the mixture into balls and flatten with a fork on a baking tray lined with baking paper. Put in oven for 15 to 20 minutes or until firm on the top and golden brown on the bottom.
